
Old Faithful Bar & BBQ: Pig Ribs
On yet another work trip, this time to Perth, I managed to find myself at Old Faithful Bar & BBQ. I did drop the hint of ribs earlier that day to a few of the Perth locals and was quite excited to hear that we were heading to the first traditional American BBQ smokehouse in Perth!
Old Faithful Bar & BBQ had more atmosphere than you can poke a hipster at, with beards and man-buns as far as the eye could see. The place was pumping for a Thursday night and we had to book our table of 8 for 8:30 pm barely got in that night. Needless to say, make sure you book well ahead so you don’t miss out on a feed.
A quick look at the menu and we quickly realized that we had no choice but to go for the All in BBQ. I was keen on the ribs but could not leave the Old Faithful Bar & BBQ without trying their beef brisket and pork crackle and corn bread and BBQ beans and BBQ Chicken…. You get the point! There was no way we could decide on one dish from the menu!
The waiter explained our options and took our order, returning quickly with 2 gallons of beer, that’s right, they sell beer by the gallon! With a table full of hungry blokes, the beer eased our hunger pangs while we waited for the feast to arrive.
And arrived it did, first came a massive platter of pork ribs! The ribs were smoked to perfection, meat was soft, full of flavour and easy to eat. The house made sauces accompanied the ribs perfectly, trying the meat with each of the sauces but sticking to their BBQ Sauce. I would stay away from the Fucking Hot sauce; it has the potential of blowing your head off!
I had to stop myself from eating the ribs as the rest of the All in BBQ platters arrived. Three more platters of meats and sides hit our table and there was no room to move! I won’t go through all the meats but would recommend the beef brisket, tri-tip and the chicken wings… who am I kidding, just eat all the meats! Don’t ignore the sides though, they do a fantastic job with the sides and even make brussel sprouts unhealthy for you! But let’s face it, if you were on a diet, you wouldn’t be going to Old Faithful Bar & BBQ!
You could see that there was a lot of care taken with the preparation of each of the meats. Old Faithful Bar & BBQ rest their meats in brine for up to 12 hours and then using a combination of traditional American BBQ flavours and Australian native spices, they cook the meat using a Low n Slow hot smoking method. The cook time ranges from 18 to 26 hours, using a combination of beech, hickory and coal. All I can say is, it’s worth all that effort!
Back to the rib and in all honesty I wouldn’t go back to Old Faithful Bar & BBQ for the ribs alone, they were great but not fantastic, unfortunately they were a little too cold for my liking. I know this is an American BBQ style but it wasn’t for me.
On the other hand I would be back here at a drop of a hat for the All in BBQ! The ribs were just one part of the total package that Old Faithful Bar & BBQ offer and as much as I am just reviewing the ribs, the whole experience of the Old Faithful Bar & BBQ made it an awesome night and I highly recommend visiting it if you’re in Perth.

Pros:
- The All in BBQ and the beer!
- The atmosphere!
Cons:
- The meat was served a bit too cold for my liking but this may not be a negative for everyone.
